This cast iron seared endive salad with bacon and paleo caesar dressing looks fancy as France and is a breeze to make. Endives are relatively new to me and seriously what rock have I been living under because they are delicious. They’re just as delicious raw — tossed with some apples and honey lemon vinaigrette — as they are pan seared, grilled, or braised. I’m obsessed!
I whipped this salad up the other day on a really relaxing weekend at home. My boyfriend was at a weekend seminar and I went 1000% into creation mode and cooked, created, and photographed recipes. I am at my happiest when I am ‘in flow‘ creating and improvising with some ace music, that good Arizona lighting, and just me and my kinesthetic senses creating something. Where’s it gonna go? Who knows…but that’s the beauty of it.
